They are a small batch coffee roaster based in DeLand, Florida. Their coffee is specialty grade and ethically sourced with as much transparency as possible. They roast each batch according to a well crafted roast profile to bring out the best inherent flavors of each coffee. They manually roast each batch on a 12 kilo Diedrich.

The Story

As the name suggests, this is a place built on stories—stories of people, of passion, and of coffee. The journey began with a deep appreciation for community, a love of coffee roasting, and a humble laundry room outfitted with nothing more than a box fan for ventilation. What started as a family-run side project soon found its roots in a small space at DaVinci Design Studio, where coffee was roasted and sold at the DeLand Farmer’s Market in Artisan Alley.

What was once a weekend hobby quickly became a full-time pursuit. On May 4th, 2015—fittingly celebrated as “May the Fourth Be With You”—the team opened their first café inside the original roasting space. Within a year, the operation had outgrown itself, with coffee sacks piling high. In early 2016, a new chapter began with the lease of a vacant storefront and garage on Georgia Avenue. After a full renovation, the current café opened just half a block from the original market stall.

Today, the café continues to thrive as a neighborhood cornerstone, proof that sometimes, the biggest impacts happen just steps from where the story began.

Why Trilogy

The name is a response to a simple yet profound question: What does it take to create a truly great cup of coffee? The answer unfolds through three interconnected stories—Coffee, Company, and Community.

The story of the coffee begins at its origin—in the countries, farms, and cultures where some of the world’s finest beans are grown. Behind each harvest is the hard, often overlooked labor of farmers who dedicate themselves to excellence through every stage of production. Quality coffee is only possible through a commitment to transparency, ensuring not only exceptional flavor but also ethical practices that support and sustain the people who make it all possible.

The second chapter focuses on the company itself and the craft behind roasting and brewing. Every effort is made to honor the integrity of the beans, preserving the distinct character of each origin through careful, intentional methods. From roast profile to brew technique, excellence is the standard.

The final chapter belongs to the community. A great cup of coffee reaches its peak not in the roaster or on the farm, but in the moment it’s enjoyed. When the aroma, the warmth, and the flavor come together in your hands, the story is complete. From seed to cup, it’s a journey made meaningful by those who drink it.
