The story of Dom Pérignon begins in the 17th century at the Abbey of Hautvillers in the Champagne region of France. Dom Pierre Pérignon (1638–1715), a Benedictine monk, was appointed cellar master at the abbey in 1668. Contrary to popular myth, he did not invent champagne, but he played a pivotal role in improving wine production methods during a time when winemakers struggled with refermentation in bottles—a problem that often caused bottles to explode.
